We’ll celebrate seasonal crops as we prepare delicious rustic dishes…..many of which can be made ahead to keep it stress-fresh for the big day. Our menu may include recipes such as Roasted Sugar Pumpkin Soup, Country Sausage Stuffing with Apples & Herbs, Spaghetti Squash Gratin, Maple & Bacon Roasted Brussels, and scrumptious Cranberry-Pear Fruit Strudels. Its pie time and we have you covered for the Thanksgiving holiday! Come to the farm kitchen to learn all the basics for making delicious country-style pies including techniques on tender pie crust, rolling & assembly, and proper baking.…..all while keeping it fun, simple, and stress-free. Class includes individual hands-on preparation of 9” deep dish Caramel Apple Pies using farm-fresh apples, with each participant taking home their very own unbaked pie to pop in the freezer and bake fresh for their holiday table! Additional pie recipes will be included in the recipe book, and class will enjoy coffee & pie at the end of the workshop
Join us to gather these sweet and tart beach plums at Crane Beach. We’ll then head up to the Great House kitchen to make beach plum jam. All materials will be provided and participants are welcome to take their hard work home! Adults only. Pre-registration required.
March is the time for sugaring in New England. Appleton keeps this very special tradition alive by tapping the farms’ beautiful maple trees and producing wood-fired, small-batch syrup. The first part of the workshop will include a leisurely walk around the farmstead to show how sap is harvested and collected. The tour will wrap up at our sugar shack so you can see (and smell!) the transformation of sap to syrup. You’ll gather in the farm kitchen for the second part of the workshop, where chef Carolyn Grieco will teach how to make some of the most delectable maple syrup recipes. Workshop ends with a generous sampling of all our delicious maple dishes!
This ‘back-to-basics’ series provides a comprehensive approach to the fundamentals of cooking as we explore traditional culinary methods & techniques to enhance your knowledge, skill, and understanding in the kitchen. Each workshop will focus in-depth on a particular skill set, with guided hands-on practice as we prepare seasonal dishes applying specific techniques. Proper knife skills, measuring, and kitchen tools will also be discussed, and all workshops include chef instruction, printed recipes, and a light lunch in the farmhouse!
